Coconut oil makes for a tender crumb in classic peanut butter cookies. This healthy recipe offers another delicious end to any of your healthy meals or a decadent snack in the middle of the afternoon.

Ingredients:
- 1 cup coconut oil
- 2 ½ cups whole wheat flour
- ¾ cup organic cane sugar
- 1 1/3 cups brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups crunchy, unsalted natural peanut butter
Instructions:
Preheat the oven to 350 degrees Fahrenheit. Mix together the flour, baking soda, baking powder and salt in a medium bowl. In a large bowl, beat together the coconut oil and peanut butter using a hand mixer on low speed. Add the eggs and combine thoroughly. Beat in the sugar and vanilla. When fully combined, mix in the flour mixture using a wooden spoon or your hands. The mixture will be quite dense and thick. Roll into balls, place onto a baking sheet and use a fork to slightly flatten the balls while creating hash marks. Bake for 8 to 10 minutes.
