Ingredients:
- 1 cup cooked quinoa
- 2 ½ cups coconut or almond milk (not the canned coconut milk, but the type in the carton)
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 3 tablespoons coconut oil, melted
- 1/2 cup raisins
- ½ cup dried apricots, chopped
- 3 tbsp. coconut oil
- ½ cup fruit juice-sweetened dried cranberries
- ½ cup shredded unsweetened coconut
- ½ cup slivered almonds, toasted
Instructions:
Preheat the oven to 400 degrees Fahrenheit. In a large baking dish, mix the quinoa and the other ingredients thoroughly. Place in the oven for 45 minutes.
