Why eggs are your brain’s favorite food

eggs and brainGood news egg lovers: eggs are super good for your health. That’s right, if you wake up and enjoy an egg, or really have an egg any time of the day, you are taking the necessary steps to maintain proper brain function.

It’s no surprise that our brains can deteriorate as we age, and with cases of dementia and Alzheimer’s disease on the rise, you want to do anything you can to preserve your brain health.

Studies have shown that eggs help maintain neurological function and maintain a sharp brain. Egg yolks, in particular, are rich in choline, which assists with neurotransmitters that help memory and communication between brain cells. A study from Boston University found that the higher a person’s choline levels were, the higher they scored on memory tests.

Egg consumption was also associated with enhanced performance on neuropsychological tests of the frontal lobe, which helps boost cognition and may delay the onset of brain diseases like dementia.

If you’re concerned that eating eggs will increase your cholesterol, don’t be, that was deemed a myth somewhat recently.

Baked eggs in tomato sauce

Ingredients:

• 2 tablespoons extra-virgin olive 1 medium onion, diced
• 2 cloves garlic, minced
• 1 28-ounce can diced tomatoes with their juice
• 1/2 teaspoon red pepper flakes
• 1/2 teaspoon smoked paprika
• coarse salt and ground pepper
• 8 large eggs
• 1-ounce pecorino Romano cheese, grated

Preheat the oven to 400 degrees Fahrenheit. Place a large sauté pan over medium heat and add the olive oil. Sauté the onions for about seven minutes or until they are soft. Add the garlic and cook a minute or two longer. Stir in the diced tomatoes, red pepper flakes, and smoked paprika. Season with salt and pepper. Cook for about 15 minutes to allow the flavors to meld. Transfer the sauce to a shallow 9×13-inch baking pan. Crack the eggs into the sauce and place them in rows. Bake for 20 to 25 minutes, until the whites of the eggs are set and the yolks are still soft. Sprinkle the Romano cheese over the top and serve with the bread.
