Make the flavors of a Greek salad portable with this easy recipe. Using a whole-wheat pita instead of bread is a nice change of pace.
Ingredients:
- 1 cup romaine lettuce, shredded
- 2 ounces feta cheese, crumbled
- ½ cucumber, seeded and chopped
- 5 black olives, quartered
- 10 grape tomatoes, quartered
- 1 tablespoon red onion, mined
- 2 teaspoons lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon dried oregano
- salt and pepper to taste
- whole wheat pita rounds
Instructions:
Whisk together the lemon juice, olive oil, oregano and salt and pepper to taste, set aside. In a large bowl, toss the romaine, feta, cucumber, olives, grape tomatoes and red onion. Mix in the dressing. Halve the pitas and open the pocket. Stuff each of the four halves with the salad.
