Ingredients:
- 4 boneless, skinless chicken breast halves
- 1 tablespoon olive oil
- 3 cloves garlic, chopped
- salt and pepper to taste
- ¼ cup dry white wine
- ½ cup chicken broth
- 1 tablespooon minced fresh rosemary
Place the chicken breasts between two pieces of plastic wrap and pound to 1/4 to ½ inch thickness. Season with salt and pepper. Pour the olive oil into a large sauté pan and heat over medium heat. Add the chicken breasts and brown on both sides, remove to a plate. Put the chopped garlic into the plan and cook for one minute. Add the white wine and scrape up the browned bits from the chicken breasts. When the wine has reduced a bit, add the chicken broth, rosemary and the chicken breasts. Cook until the chicken is no longer pink in the center – about 7 to 10 minutes – and sauce is reduced so it is slightly thick.
